Almost two years after the closure of the legendary Toscana at The Ritz Carlton Hong Kong, Hong Kong’s self-styled “Best Italian chef in Asia” Umberto Bombana padded up the road to open his "most personal and distinctive project" yet. It was January 2010 and fans have been applauding his unique, sophisticated and ever-contemporary culinary creations ever since.
The dress code may politely request "no shorts, sandals or slippers" but make no mistake, this is elegant dining at high levels and one of the hottest tables in town. Frederico Fellini might be his inspiration and the white truffle his favourite ingredient, but Bombana is a master of his craft, conjuring rarefied Italian flavours from multiple ingredients that mama would only dream of.
