While Skye on the 27th floor is both a restaurant and bar operation, it is the outside deck and illuminated bar that really captures the imagination. Cocktails are both a triumph of flavour and presentation – indeed the grammers are out in force. If you're looking for a drink with a kick, look no further than the Pan-Taro which takes a slug of pandan-infused cognac and bourbon and stirs in coconut rum, Dubonnet, Mancino Rooso, Taro essence and Angosttura bitters. For something equally expressive but a little lighter, try the So-Mek cocktail which mixes tequila wth ginseng, citrus and honey citrus tea, all topped up with a soupcon of beer. All the major spirit categories are well represented and there's a short wine list of interesting but expensive wines. Soak it all up with a charcuterie plate, spicy chicken lollipops, half a dozen oysters or a dirty burger. The views are characteristically magical, aided by an in-house DJ who performs most nights.
