The kitchen's stainless steel chef’s counter is another focal point while hand-made marble and terrazzo floors, decorative lights by Michael Anastassides, bespoke carpet designed by Omar Khan and dining chairs by Jason Miller continue the high spec, but relaxed theme.
Ricardo Chaneton is an acolyte of Petrus (and Mirazur in France) and it shows in a menu with seasonality and creative excellence. The flavour palette is modern French with South American inflections. Witness a puffed corn tortilla with a stuffing that bursts with a savoury lobster claw brandade or heirloom tomatoes accompanied by avocado, diced cucumber melon and crushed avocado leaves and elevated with a tomato dressing made with tamarillo and olive oil. Wash it all down with well-chosen wine and vibrant Latin music chosen by Ricardo himself.
