Quinary pushes the envelope with rotary evaporators, freeze-dehydrators, redistilling pot stills and slow cooking of home-made flavoured spirits, all from master mixologist Antonio Lai’s on-site lab. The signature drink showcases Earl Grey Caviar Martini, where a mist of Earl Grey is applied at the finish and bursts with ‘caviars’ of the tea, demonstrating how the classics are respected but take on a new twist.
