Sustainable, farm-to-table dining is celebrated at this relaxed high-end diner that plays by the seasons with the very best ingredients and never ceases to amaze with its creativity and technique. Simon Rogan (also L’Enclume and Roganic in England) continually pushes the boundaries with his startling contemporary food and clever combinations, and his dynamic Hong Kong kitchen delivers with aplomb.
Dinner might include citrus cured salmon, pike perch and seaweed tartlet, New Territories pork with tapioca and shrimp or dry aged beef tartare, followed by poached grouper with cod roes, tomato and kale or 14 days aged duck with turnip and shiso. Don’t miss dessert, it’s always a highlight, as in caramelised yoghurt with fig leaf cornet or whipped pecan praline with brownie fudge and a cocoa nib. Aulis is their chef’s table where seats can be booked individually or all 12 can be reserved for a private event.
