The joy of retaining their coveted 2 Michelin stars in 2022 was unbridled at this well established bonne bouche in the Pottinger hotel. Unsuprising really, given what it takes to deliver the precise exectution of this fine dining experience day in day, day out, both in the kitchen and front of house. But that is what they do, producing French cuisine prepared with both French and Japanese technique and a larder of Asian and Japanese ingredients. The kitchen is currently playing to the top of its game, turning out dishes of exquisite simplicty that show off their ingredients perfectly. Cocktails, wine and artisanal sake enjoy the same level of detailed thought and execution, while teas are treated with equal reverence. Service is knowledgeable and beautifully orchestrated. Decked out in monochrome creams and browns, the setting is old school intimate rather than avant garde but is supremely comfortable.
