Agustin Balbi has created an experience that pastes Japanese inspiration onto his roots from Spain. This is fine dining at an elevated level as evidenced in Japanese sea bass with broccoli, anchovies and hime kabu, Kumamoto pork shoulder with kabocha, date and chimichurri, or the best of Argentine beef with horenso, parsnip, smoked sardine, roasted onion and black truffle. You can also go large on the tasting menu, with matching wines if you choose. Dishes might include Blue lobster with soba and an XO bisque or 21-days-aged Angus beef with kombu and kristal caviar. The breads are all exceptional, together with beautiful artisanal butter and olive oil. Wash it all down with nicely selected wine – from Spain, Germany and Portugal as well as France, Italy and the New World plus, of course, a good selection of saké.
