Agustin Balbi has created an experience that incorporates his Spanish roots with Japanese inspiration. This is fine dining as evidenced in Japanese sea bass with broccoli, anchovies and hime kabu, Kumamoto pork shoulder with kabocha, date and chimichurri, or the best of Argentine beef with horenso, parsnip, smoked sardine, roasted onion and black truffle. You can also go large on the tasting menu, with matching wines if you choose, and dishes might include Blue lobster with soba and an XO bisque or 21-days aged Angus beef with kombu and kristal caviar. Wash it all down with exquisite wines – Spain Germany Portugal as well as France, Italy, the New World all represented and, of course, a good selection of saké.
